Remember waaay back in January when I talked about The Quarter Life Crisis that all mid 20’s-mid 30’s folks go through? I touched a little on the subject of friendships.
When did making friends get so hard?! When you’re in school or a larger work place, surrounded by tons of people, it’s easy to have a variety of friends or even people that become friends just because you see them on a daily basis. Some of these people you probably don’t have too much in common with other than proximity. Suddenly you change jobs or are no longer in school and you find yourself losing contact once you realize that you have nothing in common with some people.

I made a delicious oven roasted chicken that turned out beautifully! I’m not trying to sound like I’m bragging but it looked fancy, so if your hosting a dinner this piece was easy and will definitely impress friends!
Spatchcock Chicken Under a Brick is the bird of many names, because this method of cooking fowl is also known as butterfly (butterflied?) or split chicken. So what the heck does that mean? It pretty much means that you remove the backbone of the bird and flatten it out a little so it is all at one level. This allows the chicken to cook evenly, and it works with any fowl, turkey, duck, cornish game hens, etc.

Hiya wonderful readers I’ve missed so much!!!
I know it has been 2 whole months since my last blog post. I wanted a new look for Reluctantly Adulting and it took a while to get all the kinks worked out. I had to go back and reconfigure post layouts, it ended up being a longer more drawn out process than I anticipated. On top of that I got SUUUPER sick for a couple weeks and I’m still bouncing back.
Isn’t that how life goes?

January has been a crazy month….but there is hope and inspiration in the people that surround us. I believe in us. The politics of America have come crashing down around us. Hard. I am trying very hard to keep daily every day life more pleasant, because I honestly start feeling sick and dizzy looking at Facebook and news broadcasts. This doesn’t mean I’m not paying attention. Trust me, I am. But I also know that I can not let my every thought be consumed by everything that is going on. It’s nice to try to have happy more normalized moments to give your brain a break.

I am back at it! After a week of a baaaad cold, I am feeling more like myself and less blahrg.
It’s a new year, and new years get you thinking and reminiscing. Remembering old love interests, and friends. You wonder what so and so is up to, and before you know it…you are doing a little Facebook stalking. Social media makes it so easy to search someone and catch up on their whole life. Suddenly, you realize that you’re almost 30 and high school was 10 years ago! Where did time go? You start comparing people’s successes and milestones in life, to your own. Your self esteem starts taking a big hit and you start regretting logging into Facebook.

Homemade Dog Birthday Cake; bonus doggie beer and ice cream

I didn’t do my usual blog post yesterday and for a good reason too.
It was my dog’s birthday!!!
Lafayette turned 4 (time flies), yes, she is adopted. And no, we don’t know exactly when she was born but we have a rough idea. Everyone deserves a birthday, and with the little information we could gather, we picked one for her! We celebrate her birthday every year, and eventually when we have a house with a yard, she’ll have a full on birthday bash!
