Baked Avocado Egg

Hi guys! This week I thought I’d share a healthy breakfast/lunch thing I’ve been doing. Drumroll……The Baked Avocado Egg! If you haven’t seen this ALL over Pinterest, then you must not be an avocado fan, and if you do not like avacado, this is not the recipe that is going to change that. Sorry.

Ingredients:
1 Large Avocado
2 Eggs
Optional:
Cheese
Seasonings
Salsa

You pretty much only need an avocado and 2 eggs. Anything you wanna add is up to you!

Set your over at 450.
Slice avocado in half and remove the seed, crack one egg in the seed crevice of each half of the avocado. Then top with salt and pepper or in my case herbes de provance (cuz that’s my favorite egg seasoning), I also put cheese on mine. You can make the avocado holes bigger by removing some avocado meat, to make your egg fit. I get large avocados so my egg fit pretty well, I don’t mind that a little spills over.

Pop that baby in the oven for 12 minutes or until cooked to your desire. I like my eggs a little runny. I topped mine with salsa afterwards!

Yummers! So good and healthy! It tastes exactly how you think it would, like egg and mostly avocado. I like it!
