Hi guys! Sorry I have been slacking on posts. Working on some things for you guys and it’s taking a bit longer than anticipated. So, in the mean time, here’s a short recipe post!
I have NO clue why everyone likes this potato salad I make, but I am happy they do and love making it. It’s delicious as a side for any outdoor summer cook outs. It’s simple, easy and mayo free! Don’t get me wrong, I love me some mayo, but sometimes you want something a little lighter to round out all those burgers and brats. Since I just made it for Easter, I thought I’d share it with you guys since everyone always asks me how to make it. Before I start, I’d like to share that I am by no means a professional chef/cook person :p
Ingredients:
2 and 1/2 tablespoons of white vinegar
1 teaspoon of yellow mustard
1/4 cup of extra virgin olive oil
1 tablespoon of chopped fresh dill
3lb bag of red potatoes
salt and pepper (to taste)
Steps:
Put your red potatoes in a large pot, cover with water.
Boil all 3lbs of red potatoes for approx. 20 min. I add some salt to the pot once they start to boil.
While the potatoes are boiling make your dressing.
Put olive oil, vinegar, mustard, and salt and pepper (to taste) in a bowl. Whisk away.
After it’s well whisked, it should be the same consistency and color throughout. Like this:
After your potatoes have boiled for 20 min. drain and let cool. Chop your dill up!
You can add more or less dill if you’d like, I think roughly 1 tablespoon chopped is good.
Cut them potatoes up! I like ’em a bit chunky but it’s up to you. I slice in half and then each half in quarters.
Once all your potatoes are chopped in a big bowl. Re whisk dressing and drizzle evenly on top, add the dill, and mix with a wooden spoon or a rubber spatula.
Add more salt and pepper to taste. Whatever strikes your fancy! Yum potato salad! So simple to make.
